I’m grateful for freshness, for food that is green and light and nutrient-dense. For food that is naturally spicy. I am grateful for the absolute joy that is arugula.
Sometimes – writing here in March of 2022 – it feels like a miracle that we can get arugula, in Minnesota – all winter. There were times last year that we couldn’t get paper products, but we could always get green leafy vegetables. That the food supply chain remained (mostly) intact through the last two years is amazing to me. Grocery stores had food – they had all kinds of food – fresh food and canned food and cereals and salads – and for that I am profoundly grateful to farmers and truck drivers and grocery store workers and food suppliers and processors and policy makers and every single person and tractor and machine and truck that participated in getting food to stores. I’ll never take any of that for granted.
